TETSUBIN CAST IRON TEAPOT

Before Lucas leaved for a 1 month trip to Japan, I had only wish. I asked him to bring me my first teapot from Japan, which will become integral part of my teapots collection.
And here is my first Tetsubin cast iron teapot. Volume of this teapot is about 500ml and I believe, that we will spend together a lot of nice moments in the future. Hope, that you will enjoy the photos.

Než Lukáš odjel na měsíc do Japonska, poprosil jsem ho, aby dovezl nějakou pěknou konvici, která se stane nedílnou součástí mé sbírky čajové "keramiky". Níže přikládám fotografie mé první japonské, litinové konvice Tetsubin. Konvice má objem cca. 500ml a věřím, že s ní v budoucnu užiji hodně pěkných chvil :).

 

 

 

 

 

 

 

 

 

SAN CHA - WILD BLACK TEA

China province of Yunnan is known for it’s Puerh tea and Taiwan also has its own indigenous wild tea plant known as Shan cha - mountain tea.

Virtually unknown in the West, Shan Cha’s presence and use as an infused drink has first been recorded in Chinese writings dating back to the 17th century (1697). Its botanical characteristics are somewhat close to the Assamica with its long leaves but distinct with unique adventitious shoots arising from its underground roots. It is a shrub that prefers a wild, mountainous habitat with altitudes ranging between 650 m to 1500 m. Four distinct protected areas have been put in place in central, south and eastern Taiwan for the preservation of this National treasure which is revered as the father plant to some of the most unique and distinctive tea hybrids of Taiwan. For example, it is from this unique wild strand that the Taiwan Research and Experiment Station (TRES) have successfully developed the now famous TRES-18 Red Jade black tea which has fueled the whole black tea revival in Taiwan since the turn of this new century.

This tea is not promoted to sell into the market because of its wild characteristic. It is a plant that doesn’t render the same taste if cultivated in a more systematic way therefore it is quite rare. The tea we propose is in fact made from leaves that are picked from wild trees that are found randomly in the surrounding mountains of Yu-chi Township. To do so, the producer gets up at 4 o’clock in the morning during the picking season of July and August to roam the mountains with aboriginal pickers to look for the wild tea. Only trees picked at an altitude of no less than 1000 m are considered for the best taste characteristics. Furthermore, just like Oriental Beauty oolong, Gui Fei oolong and Mi Xian black tea, Shan Cha is a bug-bitten style tea where a small leaf hopper will nibble the leaves and leave their characteristic contribution to the taste of this tea: a wonderfully sweet honey finish that is quite distinctive and pleasant.

This is possibly the easiest black tea to drink. It is very distinctive and unique in taste. This is a subtle charming tea, yet extremely satisfying and with surprising stamina. The taster will be greeted with a pleasant aroma of baked oats with buttered sweetness and a discreet floral note of wild rose will charm the nose. The liqueur is all smoothness with very light refreshing tartiness. The taste is all pleasant and round with evocations of pastries and baked sweets with fruit compote notes similar to Japanese white peaches. What surprises the palate is the inviting suppleness of this tea that makes you want to drink cup after cup after cup. This is a must try tea!

Čínská provincie Yunnan je známa pro svůj Puerh a také Taiwan se může pochlubit čajem z divoce rostoucího kulivaru a tím je právě San cha.

Na západě ne moc známý čaj, první písemné zmínky se však datují do 17. století. Kultivar velmi podobný Assamice, čaj s dlouhým listem a typický velkým množstvím kořenových výmladků. Spíše tedy divoce rostoucí čajovník keřovitého vzrůstu, vyskytující se v nadmořské výšce od 650 m.n.m do 1500 m.n.m. 
Byla založena 4 chřáněná území v centrálním, jižním a východním Tchaj-wanu pro zachování tohoto národního pokladu, který je ctěn jako mateční rostlina některých výjimečných a velice ceněných čajů, pocházejících z Tchajwanu. Z tohoto čajovníku byl například vyšlechtěn společtností TRES výjimečný TRES-18 red Jade černý čaj, který nastartoval produkci vynikajících černých čaju na Tchajwanu.

Tento čaj není propagován pro prodej na trhu, a to vzhledem k původu z divoce rostoucích čajovníků. Čajovník neposkytuje stejnou chuť v případě, že je cíleně pěstován, proto se jedná o velmi vzácný a výjimečný čaj. Čaj, který nabízíme, pochází z divoce rostoucích stromů, jež jsou náhodně objevovány v oblasti Yu-Chi Township. Aby to bylo možné, tak místní sběrači vyrážejí do hor kolem čtvrté hodiny ranní, a to v období sklizně, červenci/srpnu. Za kvalitní se považují listy z nadmořské výšky kolem 1000 m.n.m. Navíc San Cha patří do kategorie "napadených čajů". Tedy stejně jako Gui Fei, Oriental beauty, Mi Xian black, tak i tento čaj je napaden hmyzem, což ve výsledku přináší nezapomenutelný, medově sladký aftertaste.

Jedná se o velice lehce pitelný čaj, avšak velmi výrazné a jedinečné chuti, velmi uspokojující. Nabízí vůni pečeného ovsa s máslovou sladkostí a diskrétním náznakem vůně divoké řůže.
Nálev je velice hladký a lehce osvěžující. Pocítíte příjemnou, kulatou chuť připomínající pečivo a pečené cukroví s ovocným náznakem po japonských bílých broskvích.

Milovníci černých čajů nesmí tento skvost vynechat - SAN CHA!

Oriental Beauty - BAI HAO OOLONG

Let me introduce the Oriental beauty - Bai Hao Oolong. This 70%-80% fermented tea is a real classic between the Taiwan oolongs. It provides unique and unmistakeable taste and also great stories about its origin. 100 years ago it was called "Formosa oolong" and for a long time period (during Qin dynasty to Japanese era) it was a major tea for export to Europe. At this time, people also called it "champagne oolong" and when the Queen Elizabeth II of England drank this tea, then named it "Oriental beauty". Original name in chinese is "Bai Hao Oolong" or "White tip Oolong" in english. It has the same meaning. Tea is produced from two tender leaves and white-tipped buds from the tea tree. 
Taiwanese pronunciation is "Pong Fong Tea" and there is another nice story linked to this name. Back to the Japanese occupation era, tea farmer in Xin Zhu area produced tea, that was seriously bit by a green leaf bug, they are sometimes called leaf hoppers. He took it to the Taipei City for a sale and unexpectedly got a very good price. When he told this story to people in his village, no one believed, that he really got a good price. Therefore people said, that he is a "Pong Fong", that means overstate, exaggerate etc.

Rád bych Vám představil Oriental beauty - Bai Hao Oolong. Tento čaj oxidovaný na 70%-80% je opravdovou klasikou mezi taiwanskými oolongy a nabízí nejen unikátní chuť, ale také velmi zajímavé příběhy, které se pojí s historiií a názvem tohoto čaje. Zhruba před 100 lety se tento čaj nazýval "Formosa Oolong" a byl určený převážně pro export do Evropy a UK. Lidé jej také nazývali "Champagne Oolong" a královna Anglie, Alžběta II, jej po ochutnání označila za "Oriental beauty", nebo-li Orientální krásku. Původní název v čínštině je "Bai Hao Oolong", v angličtině "White tip Oolong", což je významově totožné. Čaj je produkován z 2 jemných vrcholových listků a bílých, ochmýřených pupenů čajovníku. Krásný příběh se pojí také s taiwanským názvem čaje "Pong Fong". Během éry Japonské okupace, farmář z oblasti Xin Zhu vyprodukoval čaj, který byl výrazně napaden malými zelenými koníky. I přesto vzal pěstitel svůj čaj na prodej do města Taipei a překvapivě jej prodal za velmi dobrou cenu. Svůj příběh poté řekl lidem ve vesnici, ale nikdo mu nevěřil a tak vznikl náze "Pong Fong", což v překladu znamená, přehnaný, zveličený atd.

For this review I used the Yixing Tea pot set - 150ml, which is specified for a Kung Fu Cha. Firstly I warm up the tea pot and used about 7-8g of tea. First brewing was maximally for 10s, also the secong and third was simillar. Then I always little bit increase the brewing time, just for a few seconds more. This tea can provide more then 8 brewings and we are speaking about the very good standard grade of Oriental beauty. In case you will make tea from some extra grade, like a Premium White Tippy Oriental beauty, you will achieve greatly improved taste, aroma and of course more brewings of tea, real pleasure :). Tea has a fruit like taste with a honey smell, velvet texture, with a hints of wild spice.

Pro přípravu čaje jsem použil Yixing čajový set - konvičku s obsahem 150ml, která je určena pro přípravu čaje stylem Kung Fu Cha. Konvičku jsem nahřál vroucí vodou a použil pro přípravu 7-8g čaje. První nálev jsem luhoval maximálně do 10s, to stejné platilo i pro druhý a třetí. Poté jsem u dalších nálevů postupně zvyšoval čas luhování, avšak v rámci vteřin, vše dle citu. Čaj nabídne minimálně 8 nálevů (více jsem nedělal). Mluvíme však o standardní jakosti Oriental beauty. V případě, že použijete kvalitní třídu tohoto čaje, např. Premium White Tippy Oriental beauty, docílíte kvalitnějšího prožitku a to nejen co se vůně a chuti týče, ale také množství nálevů, opravdový zážitek :). Čaj je chutí hladký s ovocnými náznaky a jemnými stopami po koření, nabízí jemnou medovou vůni.

WEN SHAN BAO ZHONG OOLONG

I was thinking for a long time, which of our teas I will introduce closer as a first. Finally, I make a decision for a great Wen Shan Bao Zhong oolong.
It is wonderfull oolong with low level of fermentation. Wen Shan Bao Zhong tea is originated about 150 years ago. It was introduced by Mr.Wong Yi Cheng, from AnXi, Fujian. He used the Wuyi Oolong tea process method in making Anxi oolong tea. It was a great success in sale and he introduced this tea to everyone. Tea was packed in 150g per square paper bag and stamped by the company name. So it is called ” Bao Zhong Tea”. The best season to make this tea is in Spring or Winter harvest.
Our tea grower has more then 30 years experience in producing Wenshan Baozhong tea and very often won the prize at New Taipei district competition.
You can see the photographs of the fourth infusion of this delicious tea. After that, I decided that I might as well take some photos and write this short report.

Jako první z našich čajů bych Vám rád blíže představil výtečný Wen Shan Bao Zhong. Dlouho jsem uvažoval, který čaj bude ten první "vyvolený" a nakonec padla volba na tento vynikající taiwanský oolong.
Jedná se o výtečný, lehce fermentovaný oolong, kolem 10%. Tento čaj byl představen zhruba před 150 lety mistrem Wong Yi Cheng z oblasti Anxi, Fujian.  Aplikoval proces přípravy útesových Wuyi oolongů na výrobu Anxi oolongu. Čaj byl v té době představen mnoha lidem a nutno říci, že s úspěchem. Byl balen po 150 g do papíru, odtud pochází název Bao Zhong, "zabalen v listu". Nejlepší Bao zhong pochází buď z jarní, nebo zimní sklizně.
Námi nabízený čaj pochází od mistra, který má více jak 30 letou zkušenost s produkcí Wen Shan Bao Zhongu a často vítězí na New Taipei District Competition. Tento konkrétní čaj byl na dané výstavě oceněn třetím místem a je z jarní sklizně. Vzhledem ke kvalitám tohoto čaje je cena velmi příznivá. Pokud jste ještě neměli tu čest vyzkoušet pravý Wen Shan Pao Zhong, určitě budete mile překvapeni!
Na fotografiích je čtvrtý nálev tohoto výtečného čaje, až poté jsem se rozhodl, že bych mohl také udělat pár fotografií a napsat tento krátký report.

After few years of cooperation with this supplier, we are always looking forward for a new batch of a great quality teas. Před týdnem k nám dorazila várka čerstvého, zeleného čaje z Číny. Čaj je sklizen koncem dubna a pochází z oblasti Huang Shan, produkovaný malou rodinou firmou, se kterou máme dlouholeté zkušenosti a vždy s netrpělivostí očekáváme další várku jejich čajových lahůdek.

Huan Shan Mao Jian -  klasický a opravdu okouzlující zelený čaj z oblasti Anhui. Velmi osvěžující, delíkátní čaj s jemným náznakem divokých kapradin a máslové sladkosti.

 Lu An Gua Pian - known as the melon seed green tea, this is another classic, distinctive tea from Anhui. 

It features a sweet and rich almond-like texture that coats the mouth and lingers on pleasantly.

 Lu An Gua Pian - čaj známý také pod názvem melounová semínka, jedná se o další klasiku z čínské produkce, z oblasti Anhui. Nabízí bohatou chuť, se sladkým náznakem a texturou po mandlích.

Huan Shan Mao Fong - This is a unique rendition of the classic and enchanting green tea from Anhui
made from the same varietal, but wild. This tea has an inviting bouquet of wild flowers with notes of wild fern vegetables and buttery sweetness.

Huan Shan Mao Fong -  jedná se o velmi uníkatní variantu čajové klasiky Huan Shan Mao Feng z oblasti Anhui, čaj ze stejné variety, avšak divoce rostoucí. Vůně divokých květin a v chuti náznak divoké kapradiny s máslovou sladkostí.

Huan Shan Taiwan style green tea - This is a very unique tea which blends the Huangshan terroir with Bao Zhong style teas. It is smooth and round with light, almond like, sweetness and the flowery freshness of Taiwanese oolongs.
Huan Shan Taiwan style green tea - velmi výjimečný čaj z oblasti Huangshan, avšak zpracovaný taiwanskou metodou Bao zhong. Je to velmi jemný a lehký čaj, chutí nasládlý, s květinovou svěžšestí oolongů z Taiwanu.

Jin Xuan Black - The Jin Xuan cultivar is a perfect choice to make a black tea with a smooth creamy character with aromas of baked rolled oats and hints of sweet wild honey in your cup. An easy drinking and
soothing cup.

Jin Xuan Black - Jin Xuan je skvělou volbou kultivaru i pro černý čaj. Nabízí hladce krémový charakter s vůní praženého ovsa a lehkým náznakem chuti divokého medu. Velmi příjemný čaj k pravidelnému popíjení.

 

Wu Yi Rock oolong - This heavier baked tea made from more oxidized leaves is somewhat similar to Da Hong Pao Oolong with luscious jammy fruitiness and chocolaty roasted notes.

Wu Yi Rock oolong -  Úroveň oxidace 25%, středně pražený - level 6. Čaj podobný známému Da Hong Pao. Chuť s náznakem sladkého džemu a čokoládovými tóny.
